Description

Elevate your breakfast or brunch with this vibrant and flavor-packed avocado toast variation. 

Thick slices of artisanal bread are the canvas for a luscious blend of mashed avocado, tangy roasted beet, and crumbled feta cheese, crowned with a soft-boiled egg. The sweet and earthy notes of the beet perfectly complement the creamy avocado and salty feta, making each bite a delightful experience.

Method

Step 1

Halve the avocado, remove the pit, and scoop the flesh into a bowl. Add the lime juice, hot sauce, chopped roasted beets, and half of the feta cheese. Mash with a fork to your preferred consistency. Season with salt to taste.

Step 2

Bring a pot of water to a boil. Gently add the eggs and cook for about 6-7 minutes for a soft, slightly runny yolk. Remove the eggs with a slotted spoon and place them in cold water to stop the cooking process. Once cooled, peel the eggs.

Step 3

Spread the avocado and beet mixture generously on the toasted bread. Slice the soft-boiled eggs in half and place on top of each toast.

Step 4

Sprinkle the remaining feta cheese over the eggs. Add a handful of arugula or baby spinach on top for a fresh, peppery finish.
