Rustic Almond Flour Zucchini Bread with Almond Butter and Coconut Oil

Method
Step 1
Heat your oven to 180°C (350°F). Line a high 10x18cm loaf pan with parchment paper.
Step 2
In a large bowl, whisk together almond flour, whole grain flour, baking powder, salt, chia seeds, flaxseeds, and sunflower seeds.
Step 3
In another bowl, whisk together the melted coconut oil, eggs, sugars, vanilla extract, molasses, and almond butter. Stir in the grated zucchini until evenly distributed.
Step 4
Add the wet mixture to the dry ingredients, stirring just until combined. Fold in the toasted almonds, if using. Transfer the batter to the prepared loaf pan, arranging zucchini slices on top for decoration. Sprinkle with chia seeds for an added crunch.
Step 5
Bake for about 60-70 minutes, or until a skewer inserted into the center comes out clean. Allow cooling in the pan for at least 7 minutes before transferring to a wire rack to cool completely.
