Method

Step 1

Heat a pan over medium heat. Add two tablespoons of olive oil and the turkey bacon pieces. Sauté for about 5 minutes, or until the bacon starts to crisp.

Step 2

Sprinkle the smoked paprika over the bacon, stir to combine, ensuring the bacon is evenly coated. Add the spinach to the pan, tossing it with the paprika and bacon until the spinach is just wilted. This should take a few minutes. Remove from heat once done.

Step 3

While the spinach and bacon are cooking, toast the multigrain bread slices until golden and crispy.

Step 4

In a separate pan, heat water to a gentle simmer. Crack each egg into a cup and gently slide it into the water. Poach the eggs for 3-4 minutes, or until the whites are set but the yolks remain runny. Remove with a slotted spoon and drain on a paper towel. Season with salt and pepper.

Step 5

Arrange the sautéed spinach and turkey bacon mixture on each slice of toasted multigrain bread. Carefully place a poached egg on top of each.

Step 6

Drizzle with the remaining olive oil and season with a bit more salt and pepper, if desired. Serve immediately for a warm, comforting, and nutritious meal.
