Method

Step 1

Preheat your oven to 175°C (350°F).

Step 2

Begin your banana bread by mashing ripe bananas with a fork until you achieve a smooth puree.

Step 3

In a mixing bowl, cream room-temperature butter and brown sugar together with an electric mixer set to medium-low speed. Continue for about 3 minutes, until the mixture turns pale and creamy.

Step 4

Introduce eggs one at a time into the creamed mixture, ensuring each egg is well combined before adding the next.

Step 5

Stir in vanilla extract and the banana puree until the mixture is uniformly combined.

Step 6

In a separate bowl, sift together the plain flour, salt, and ground cinnamon.

Step 7

Carefully fold the dry ingredients into the banana mixture until just combined, being careful not to overmix.

Step 8

(Optional) Fold in hazelnuts and raisins into the batter, if using.

Step 9

Grease a loaf tin with butter and lightly dust with flour, tapping out any excess to ensure even coverage.

Step 10

Transfer the batter into the prepared loaf tin, smoothing it out to ensure an even spread.

Step 11

Bake in a preheated oven for approximately 60 minutes. The bread should be golden brown and a toothpick inserted in the center should come out clean. After baking, allow the bread to rest in the tin for 30 minutes then place it on a wire rack to cool for an additional 30 minutes.

Once it's cooled, you can slice and enjoy your homemade banana bread.
