Description

Experience the joy of baking with these effortlessly delicious scones, where the fizz of ginger beer and the tanginess of lemon meet the sweet-tartness of cranberries.

This recipe substitutes traditional milk and butter with ginger beer and a touch of plain yogurt to achieve incredibly light, fluffy scones with a hint of spice and umami from the fermented ginger beer.

Method

Step 1

In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, lemon zest, and sugar. In another bowl, gently combine the yogurt and ginger beer. Gradually mix the wet ingredients into the dry ingredients until just combined to avoid overmixing. Fold in the chopped cranberries.

Step 2

Transfer the dough onto a lightly floured surface. Divide it into six equal portions. Shape each portion into a scone and place them on a parchment-lined chopping board. Freeze the scones for 30 minutes while the oven preheats.

Step 3

Heat your oven to 200°C (392°F).

Step 4

Brush the chilled scones with a bit of yogurt and sprinkle with coconut sugar. Bake for 25-30 minutes, or until golden brown and cooked through.

Step 5
