Method
Step 1
In a large mixing bowl, combine the buckwheat flour, baking powder, baking soda, and a pinch of salt. In another bowl, whisk together the buttermilk, honey, eggs, and melted butter. Gradually mix the wet ingredients into the dry ingredients until just combined; let the batter sit for 10 minutes.
Step 2
Heat a non-stick skillet or griddle over medium heat and brush with melted butter. Pour ¼ cup of batter for each pancake, cooking until bubbles form on the surface, then flip and cook until browned on the other side. Keep pancakes warm.
Step 3
In a separate pan, melt the butter over medium heat. Add the diced apples, brown sugar, cinnamon, nutmeg, and a pinch of salt. Cook, stirring occasionally, until the apples are soft and caramelized, about 10 minutes.
Step 4
